Pancake Day!


Sweet, Savoury, American, Scotch, Crepes, Hotcakes, Flapjacks, Crumpets!

Here are a few of our serving suggestions - Caramelised Oranges, Fried Banana & bacon,Cinnamon Sugar & a squeeze of lemon. Go savoury and fill with Bolognaise sauce or GrilledMushrooms, Thyme & Goats Cheese.

Make the batter tonight so its ready to pour into your pan tomorrow morning. Don't be disheartened if your first pancake's a flop, it nearly always is!! These pancakes are more crumpet than crepe but are delicious nevertheless!

Pancakes with Fried Banana

For the batter, whisk together:
3 large eggs, 115g flour, 1 tsp baking powder, pinch of salt, 140 ml of milk into a smooth batter.

For the caramelised bananas:
In a pan over medium heat, melt 2 Tbs of butter then add 3 Tbs of caster sugar and melt to form a caramel sauce. Add 4 sliced bananas and toss in the sauce until golden and warmed through.

For the pancakes:
Heat a non stick pan over medium heat. Pour some of the batter into the pan and cook until it starts to look golden and firm. Flip over and cook on the other side until golden brown.

Serve together with a blob of Greek Yoghurt.

Favourite Cookbook

This is our favourite cookbook of the moment!
Tasty, healthy summer food with a Mediterranean twist.

Roasted cauliflower and hazelnut salad (V)

1 head of cauliflower, broken into small florets (660g)
3 tbsp olive oil
Salt and black pepper
30g hazelnuts
1 large stick of celery, cut on an angle into ½cm slices (70g)
10g small flat-leaf parsley leaves
50g pomegranate seeds
¼ tsp ground cinnamon
¼ tsp ground allspice
2 tsp sherry vinegar
1 tsp maple syrup

Heat the oven to 200C. Mix the cauliflower with two tablespoons of oil, half a teaspoon of salt and some black pepper. Spread out on a baking tray and roast on the top shelf of the oven for about 20 minutes, until the cauliflower is crisp and parts of it turn golden-brown. Transfer to a large bowl and set aside to cool down.

Reduce the oven temperature to 150C. Spread out the hazelnuts on a lined baking tray and roast for 15 minutes. Leave the nuts to cool a little, then roughly chop and add to the cauliflower, along with the remaining oil and the other ingredients. Stir, taste and season accordingly. Serve within a couple of hours.

is this heat for real? how about something summery and refreshing to cool you down...watermelon cooler

(serves 6-8)


1.3kg watermelon

2 tablespoons fresh mint

1 tablespoon castor sugar

ice cubes

1 1/4 cups ginger ale

1/4 cup vodka

1 tablespoon fresh lemon juice

3 or 4 splashes bitters

fresh mint for garnish


puree watermelon in food processor. muddle mint with sugar in a large pitcher; fill with ice cubes. Stir in 2 cups puree, ginger ale, vodka, lemon juice and bitters. garnish with fresh mint and serve!
