Detox Monday!!!

Try this classic guacamole dip served with
fresh summer crudites instead of corn nachos....
the perfect healthy snack after a heavy weekend!
Serves 4 (makes 2 cups)

2 ripe avocados, halved, pitted & peeled

2 tablespoons fresh lime juice
1/2 medium red onion, finely chopped
2 plum tomatoes, seeded and finely chopped
2 tablespoons coarsley chopped fresh coriander
Seasoning - coarse sea salt & black pepper

Gently mash the avocados into small chuncks. Stir in the remaining ingredients and season to taste.
Serve with an array of colourful & crisp, seasonal baby veggies!!!
